I’m the only one with kids in my extended family. They like to meet early afternoon on the 25th for an appetizer potluck. I like to have a nice breakfast with my kids and enjoy watching them open and enjoy their gifts.
So I would like to make some appetizers a day or two in advance to bring with me so I don’t have to cook Christmas morning. I am vegetarian and others in the family are as well. Several family members are gluten free and dairy sensitive. Any suggestions? |

My veggie trays always get eaten up because I buy organic veggies and cut them up myself. There is a world of difference between those dried out baby carrots and freshly cut up (even the night before) organic carrots. Carrots, celery, cucumbers, snap peas, grape tomatoes.
I make a dip by sauteeing minced onion, shallots, and green onion in olive oil until browned, then deglaze with balsamic vinegar. Cool in fridge, and then once cool add to sour cream (or dairy free sour cream substitute) and salt & pepper to taste. Can top with minced chives and add any add'l spices you like. This is heads and tails above the veggie trays you buy at the store.
