I’ve been tasked with bringing green beans for thanksgiving, with some caveats. They should be kid friendly and lots of kids won’t eat green bean casserole. I have to travel about an hour to get there and no oven or stove space when I arrive. No nuts.
Given those parameters, any suggestions? I was thinking to blanch the green beans at home, then bring my instant pot and finish them off with a quick sautée in a butter/garlic mix when I arrive, with a squeeze of lemon. Then have fried onions on the side for topping. Would love to hear any ideas! |
| Ugh. I'd show up with a bag of those freeze dried green bean snacks and call it a day. Pot lucks are gross for exactky this reason--food will not be at a safe temperature. |

Keep it simple. You don't need to take your Instapot.
I'd boil/steam the green beans at home, stopping just shy of the degree of doneness you want. Drain. Sautee in olive oil and garlic. Take to your gathering. They're fine at room temperature, or you can reheat in the microwave for just a minute. |

I would stop anywhere along the way and get takeout green beans. Nobody will care.

| Leave out the lemon. |
+1. Pre-prepared dish that no one really likes anyway. You got a fool’s errand. Make it easy for yourself! |

I would cook them at home and make the Molly Yeh Magic Sauce (does not require heating) then toss together there, perhaps a quick moment in the microwave for the beans not the sauce.
These are not traditionally flavoured but they are my favourite and as you say, you want to avoid green bean casserole. https://www.foodnetwork.com/recipes/green-beans-with-magic-sauce-5411521 |

This is delicious and looks pretty on a platter. Maybe put the goat cheese on the side for any picky kids?

| I'd do green beans/ shallot from the NYT recipe. If you have it, bring in a covered casserole dish. Good room temperature or warm. Just don't overcook. |

Just finished cooking it at home and just warm it up when you get there.
If it was me I would add some carrots for sweetness. |

I’m trying this green bean gremolata by Barefoot Contessa. You can blanch and shock the beans and make the gremolata separately and then sauté together just before serving.

This and it’s not like you will eat when you get there. |
| So bizarre that you were asked to make something but given so many restrictions! Who wants to eat plain blanched green beans, gross. |
