It changes it, but it tastes better with other things. Like I love putting sweet potatoes in my turkey chili but would never do that with ground meat.

Turkey is (no surprise) drier than beef, so I think turkey chili lends itself well to a more southwest chili style, like deer valley chili, with masa. It’s lighter and really delicious!

Agreed. I usually add more spices when using turkey. That said, it's not so much of a difference that anyone would complain |

Ground chicken has a consistency more similar to beef if the softer turkey texture bothers you.
I’m allergic to mammal so we do everything poultry, but spouse and kids willingly go along with it in everything except burgers. |
