caramelize some onions, melt in the cheese, toss with pasta and some pasta water until it's a good consistency. I had this at someone's home in France.
To me it's kind of a "waste" of a hunk of bleu cheese since I like to eat it on crackers like an avaricious cheese-crazed mouse but it was good. |

I had a great recipe that you could probably mock up pretty easily. It was a baked spinach egg white omelette (it was whipped egg whites with salt and pureed spinach which was based in in a sheet pan or jelly roll pan), rolled jelly roll style around a mix of cream cheese with blue cheese and chopped tomatoes.
