Low carb dinner ideas I can reheat in the microwave?

Anonymous
Have lots of sports practices and games in the upcoming weeks where we will not be home until 8pm. What are some ideas to serve a family of 5 (basically 4 adult eaters) that I can quickly reheat when we get home?
So far I plan to make a white chicken chili in advance and sausages and roasted veggies.

We make meatloaf but use almond flour as binder.

Veggie and chicken curry.

You can roast chicken breast then reheat to add to a big dinner salad with whatever fresh veggies, cheese, dressing, etc. you'd like.

How do you reheat checking in the microwave without it becoming rubbery?

NP. I generally don't heat chicken in the microwave but if I do, I cut it into thin pieces and only heat for a few seconds until it's barely warm. Anything more, and the texture is compromised. A better way to reheat chicken is to put it in a pan on the stove with a small amount of water and cover it to let it steam for 2-3 minutes. It barely takes longer than the microwave and the chicken is moist and steaming hot. The same is true for other meats that don't microwave well.

So I actually should have said high protein no low carb. Basically looking for meat ideas and I always have quinoa/rice/veggies.

You need to get some low carb tortillas

All the fixings for burritos. Really quick heat the meat/beans and put together.

Yep have these. Over 100% of daily fiber though so can’t eat them too much.

Ok got it. With quinoa/rice/veggies, microwavable proteins include meatballs, chicken curries, beef stew, bulgogi, chicken korma or tikka masala, gyro. I find curries and stews reheat well.

This is where crock pots with timers and switch to warm are great. Might be worth buying or borrowing one. No need to precook and then microwave food.

You could do turkey chili, beef chili, chicken and white bean soup, lots of different meats to make tacos/burritos, beef stew or beef for sandwiches. My latest favorite is baby back ribs. If you broil them in the oven for just a few minutes (broil), they are better and not any more time consuming than microwaving.

If you are just not a crock pot person, A lot of meats do not do well in the microwave, but soups and chilis are your best bet. If you have a toaster oven, bone-in chicken heats up pretty well in 10 minutes.
