Meatless Monday in our house, which is usually bean bowls (rice, beans, some kind of greens/some other veg, sauce, some kind of cheese). I've got black beans, grilled zucchini, chipotle ranch and cheddar for tonight's. I may cheat a bit and add the leftover bacon from Sunday's breakfast.

Cheese lasagna per my kids request. I will do a batch with zucchini layers instead of noodles and also beefless crumbles, for myself. Roasted broccoli on the side for me, raw broccoli with ranch for her.

I have to cook chicken breasts before they go bad, so ... baked chicken breasts. Either marinated with soy vey sauce or a little olive oil and smoked paprika.
