2 selective private universities have checked mine out (and my husbands).

What does it mean?

They are looking for wealth, address, zip code. They even look up your home on google. They also want to know if parents are PITAS

May be too late now. Should have polished the linkedin profile before sending in the applications to reflect the extraordinaire parent persona.
They likely want to know how responsible of a parent you are. Include skilled in time management (between work, household duties, and soccer practice), proficient in lunchbox packing, skilled in carpool coordination, fluent in parent-teacher conference diplomacy, etc. Show the AOs how good you are, and why your child is a good product of your effort.

No, admissions officers do check LinkedIn for financial, career, and educational information of parents.

I pay for LinkedIn premium and this happened to me when my child was going through the process. I also saw profile views from development office employees. I’m surprised they don’t understand that people with premium can see who views the profile.

Career/job title and company? Education level of parents ?
