Any really good lentil recipes?

I need to eat healthier and I generally do OK but my family refuses to eat a lot of it.
Cooking two meals a night is killing me.

Anyone have a lentil recipe that their entire family will eat?

It is not a recipe, I don’t enjoy cooking but we like the Annie’s lentil or lentil/veggie soup. Slightly drained and over rice. It’s dinner in less than 10 minutes.

Easy and delicious. Works with the frozen butternut squash, although I prefer the larger chunks. I make a big pot on winter weekends and take it for lunch all week. Works with crusty bread for dinner too

I find that when I add lentils to something my kids already eat it works better. One of our go-tos is this lentil bolognese. I usually double the recipe and freeze half to use on nights when I’m short on time. I just toss the frozen bolognese into a pot while the pasta boils and both are ready at the same time.

Jamie Oliver’s lentil sloppy joes! It was my kids’ gateway to lentils, and now they eat them in a wide variety of contexts.

Also, remember that different types of lentils have very different textures. French or green lentils are always going to feel like a tiny bean whereas red lentils will dissolve and end up feeling like a thick soup. So it’s easy to toss red lentils into all kinds of things.

I sub soaked lentils for 2/3 of the ground meat and make burrito bowls or tacos or quesadillas.

Go to YouTube and type "Indian lentil recipes". You will get a ton of them. Healthy, plant-based and yummy versions with a variety of lentils.
