What’s for dinner tonight?

We’ve been traveling and need to eat healthy, but we’ve been doing a version of chicken every night. I also did salmon earlier this week. Any suggestions to change it up? We try to have some protein, veg, and healthy carb in the evenings.

Salad and leftover frozen pizza.

Spaghetti and meatballs. Sauteed broccolini on the side.

Homemade squash soup + baguette + cheese & crackers + carrots & hummus

Veggie chili! I sauté onions and green peppers, add a chili spice mix packet, dump in red beans or pinto beans or a mix of both along with a big can of diced tomatoes. Simmer a bit. Easy, cheap, meatless, delicious, perfect for cold weather. Serve with shredded cheese, sour cream and diced scallions for toppings.

Granted, this is not my healthiest dinner but it’s pure comfort food on a dreary day. Sliced kielbasa, pierogies sautéed with onion and butter, and roasted green beans.

This is the best! I recently learned how to make homemade pierogies -- it's actually pretty easy.

Roasted chicken, butternut squash, sauteed spinach. Leftover chicken will turn into chicken soup tomorrow.

Black bean and vegetable quesadillas. Super easy, satisfying, people can spice theirs to their personal preference, and filling. If you need a meat protein, we sometimes mix in a turkey sausage with the black beans.

Steaks, oven roasted potatoes, peas. Made my menfolk and the dog really happy.
