Butternut squash recipe that travels?

Anonymous
I am going to a large family gathering. It will be several hours from when I leave until when we eat and the host has a small kitchen so not really room for me to prep things. I also have a large butternut squash that I need to use before we leave for vacation. Is there any dish I can bring that will stay or which can be quickly reheated ?

How about a roast squash salad? Cube and roast then serve cold with maybe some goat cheese, pepitas, arugula?

I would make bisque — reheat on stove or in microwave at the gathering and leftovers can be frozen.

Your squash will be fine for a long time, if you're concerned about using it before it spoils.

This, but make it and carry it in a crockpot or instant pot. When you get there, you just need to plug it in to reheat. Won't take any stove space - you could even set it up in a different room and stay out of the kitchen entirely.

Second the soup/crockpot suggestion. I am impressed you buy whole butternut squash, if the folks at Trader Joe’s don’t cube it for me- it ain’t happening. This recipe is quite good- I added coconut milk.
