My parenting instincts says she can't afford it. The interest rates alone mean I'd need to 'share' an extra $200/month for their expenses.

They can't upgrade from nothing but my sympathy is little to none.

In kind and clear words, let them know that you won't be able to subsidize their lifestyle so they need to make informed and independent decisions, without expecting you to recuse them.
