When I made apple pie I only use about. Tablespoon or two of brown sugar. Apples don’t need a lot of sugar. I do the same for apple Brown Betty. You can make apple Brown Betty with whole wheat bread which is slightly better for sugar metabolism too.

I make apple crumple. I toss the apples in 1 tbs sugar. The crumble topping is 8 tbs butter, 2 c oatmeal, 1/3 c sugar, 1/4 c almond flour, 1/4 c flour (I use buckwheat so it's gluten free), dash salt, cinnamon to taste; I think you could cut back the sugar in the topping.

My family makes a French dessert called Clafoutis and we add very little sugar to it and it’s still delicious (and very easy to make). You can make it with apples, berries, etc.

Bake puffed pastry sheets topped with sliced apples and little cinnamon. If good apples, needs no sugar.

Baked apples: core the apple whole (leaving the bottom skin in place) and stuff with whatever you like (eg raisins, maple sugar, oats, walnuts, shredded coconut, currents, etc) and bake at 350 until the apple is soft

Also -- pay attention to the type of apple you use. Some are naturally sweeter than others. Apples like granny smith and macintosh tend to be more tart.

I don't know if you are avoiding sugar for someone who is diabetic or for someone who merely is avoiding sugar, but if the latter, you can sweeten an apple filling by adding raisins or figs, which are naturally sweet.
