A little dijon will help it emulsify. But yes, that's the recipe. Light years better than anything in a bottle.

And garlic. Definitely don’t skip the Dijon mustard though.

Recipe: In a bowl, combine a clove or 2 of minced garlic and a blob of Dijon mustard. Add 1/4 cup of balsamic and mix well. Drizzle in 1/4 cup of olive oil. I also add lots of pepper and oregano (optional). This will be enough dressing for a few salads.

I agree with all of this. If you want a little sweetness, add honey.

If you want it to taste like the bottled type, add sugar or honey. More than you would think.

They use to have a bunch of really good one- smoked, age, variety of fruits, balsamic champagne, etc.

Shop in Georgetown is closed but they deliver which mean you can not sample before you buy.

+1 to the dijon. Emulsifying it with a little mustard makes a big difference.
