| If you are going to pan-fry fish, use ghee. Regular butter burns. Scallops just take a few minutes in a hot pan, and they are what I use when I need a "fast-food". |

One of the most sustainable options, and has healthy fats. Can be strong tasting, but I like them. |
I add a little olive oil to the butter to keep it from burning. |

What are you worried about in terms of unhealthy fish?
For white fish, I particularly like what Costco has frozen (cod and mahi mahi and shrimp especially). For salmon I like Trader Joe’s Atlantic best for the money. |
