But really it's very flexible. Add whatever you want, including watermelon. One trick here is cooking the garlic a little before adding, which moderates the bite. |
| Side note, a local author has a book called “gazpacho for nacho” that is adorable. If you are making it for your kids, might be fun to add that in! |

This is the recipe we use as well. We used to use one for Andalusian gazpacho that included a chunk of stale bread, but like the Jose version better. |

My recipe is similar to Jose Andres except that it includes one sweet onion, a slice of stale bread, and sometimes one Serrano pepper for a slight kick, and I don't use as much sherry as he calls for.
The chunky "salsa" type of soup some people pretend is gazpacho has no business being called gazpacho. |

| I also make a version pretty similar to Jose Andrés’, but I add 1/4 of an onion, a bit of stale bread, red wine vinegar instead of sherry vinegar, and my not-so-secret ingredient -a teaspoon or 2 of smoked paprika. I adore the hint of smoky sweetness it adds, and I eat the stuff all summer! |
