How can I make this vacation more luxurious?

Due to a sudden work change we will have to forego our usual relaxing/warm winter getaway. Next week we will be taking a previously planned and paid for long weekend trip to a mountain lodge for hiking. Think the lodge at Yellowstone or Grand Canyon—in the middle of nowhere with limited amenities (no spa, one restaurant, overcrowded pool, etc.)

What can I do to maximize relaxation on this trip in this circumstance?

What? Seriously? I've never heard of any of this at a national park lodge. They are not luxurious but its all about the location. I would consider a private tour but if you want to use your own lodging reservations it may be difficult.

Focus on the beauty of nature? Assume you enjoy hiking since you had already scheduled the trip, so enjoy the hiking. When you get home do a spa day to recover.

Mostly, what 13:06 said - just focus on the beauty of nature.

Depending on the location, maybe you can get a private guide, maybe even one who can plan for a fancy picnic set up. There may be a nice farm to table type fancy restaurant around. Buy some comfy very portable camping chairs so you can enjoy whatever pretty little spot you find. Maybe there's other local food or entertainment to enjoy but without knowing the location, we can't help much. But there truly is a certain luxury in just being in nature, with no place to rush off to, no appointments or ticket lines.

We paid for a private tour guide of the grand canyon and it was money well.spent.

Enjoy the scenery, your health, the fact that you can do this and have people you love to do it with.

The only way I'd be able to relax in a place like that (crowded pool, state parks) is by staying in my room and reading a book.

My idea of relaxing is taking long walks in nature. Spending more money in your situation would just create anxiety.

This. Presumably you like nature since you booked it.

Or like a pp said, cancel and rebook something different entirely.

I’d book a night in a luxury hotel with spa for after I got back, send laundry to fluff and fold. Best of both worlds.
