ISO good pesto pasta salad recipe

Anonymous
Anyone have a recipe they can recommend? I plan to use the premade pesto from costco because that’s what I have.

In my experience, the pre-made pesto is where pesto pasta salads tend to go wrong. The Costco kind is okay.

My preferred pasta salad is pasta, feta, halved cherry tomatoes, baby spinach, cucumber, and olives. Pesto goes well with it. If you don't like feta, you can switch out any cheese and it still works. But it works a lot better with non-jar pesto.

I don't have a recipe, but I make something like this and it always disappears:

1. Cut up and deseed/de-goop several tomatoes. Add some salt and marinate in a little balsamic vinegar.
2. Boil up a bag of frozen cheese tortellini (or use two large packs of the fresh from the refrigerator case). At the end of the boil add in a small bag of frozen peas.
3. Drain, and then add the container of pesto and the tomatoes.
4. Refrigerate.

Also, the pp is right - I presume you are using the pesto from the refrigerator case, not the jar. The jar stuff is never very good.

Yes, the refrigerator.
