What was for lunch yesterday and today and how was it?

Yesterday: a huge salad from a place we all call "the $20 salad" - mine was $17 and change. Romaine, lentils, quinoa, slivered almonds, peach, red pepper. The guy really packed it in - I could have eaten half for lunch and half for dinner but I stuffed it all in for lunch. So damn good.
Today: orange chicken and fried rice, plus some carrot sticks. It was the first time I had the chicken and rice at this place, and the chicken seemed oddly crunchy, almost kind of burnt, so maybe I won't get it again. Will either cut up a mango or eat a banana for snack later.

I have really boring lunches, but I enjoy them. A salad of crunchy lettuce, cucumber, cheese, cabbage, tomatoes, chickpeas and homemade dressing that I make. I change what’s in the salad based on what is in my fridge. But it always has good crisp lettuce and homemade dressing and that is what makes it good and why I eat it every day without getting tired of it.

Creamy tomato soup and one of the first of many BLT’s of the summer. Soup was frozen from a batch I made last summer with my own tomatoes. BLT tomato was from the farmer’s market. I’m basically half tomato for the next few months.

I bring a lot of Mediterranean inspired salads to work. Rice or quinoa. Leftover meat or chickpeas. Feta, tzatziki, pickled onions. All over whatever greens and fresh veg I can chop.

Leftover pasta with flaked smoked trout and sundried tomatoes. Yum. I WFH but do lunch at home most days; on Fridays I'll go to Cava or Sweetgreen to treat myself.

I had tortilla chips and the Everything But the Elote dip from TJs.

I don't do intermittent fasting but have just kind of naturally stopped eating lunch except some kind of snack. This one wasn't the healthiest but also not the worst. I prefer to make breakfast a big energy boost (lean protein and fruits/veggies) and then let dinner be my heavy meal of the day, and am find just kind of skipping lunch for the most part. That way I don't get so tired in the afternoon.

Though today I have a bunch of salad remnants from dinner last night (black beans, avocado, kale, roasted sweet potatoes) so I might throw that together with a dressing just to avoid wasting them.

Cauliflower Rueben I made. Roast some cauliflower, butter the rye bread and add said cauliflower, sauerkraut, cheese, mayo and ketchup mixed, and get the sandwich crispy on the pan. Yum.

My husband's Vietnamese meatballs stuffed inside poblano peppers, with rice noodles. I call it the hot roulette: sometimes the poblanos taste like nothing, sometimes they're quite hot, and you never know in advance!

A leftover brat sausage with sauteed peppers and onions. It was very good.

Yesterday, we had a lunch meeting at work and they provided small sub sandwiches. I had one. It was good, but it left me a little hungry. Two would have been a little too much, though.

Yesterday I had leftover baked ziti. It was good.

Today I had cottage cheese with strawberries and nuts. It was also good.

Yesterday - the red bell pepper egg bites from Starbucks

Today - sauteed onions, a scrambled egg, and baked salmon. A work from home day.

Both days - egg salad. Yesterday as a sandwich and today in a wrap with lots of lettuce.
