What would you serve with this soup?

I am planning on making an Italian wedding soup with meatballs, fennel, escarole and carrots and white beans instead of pasta.

I'd like to make a substantial side dish to go with. Right now the leading contenders are

crispy gnocchi with tomatoes and onions

zucchini scarpaccia

panzanella with spring vegetables

Does one of those sound particularly appealing?

Would you add something else too? Maybe a plainer vegetable? A loaf of bread? A simple green salad?

This will be a casual back porch type dinner with all adults and teens. No vegetarians, food allergies other than nuts which I will accommodate, or picky eaters.

A substantial side dish? Sounds more like a main course with soup as an app. If you want to showcase the soup just serve bread and maybe a salad and dessert.

Maybe a caprese salad? I assume it’s a summer occasion, so nothing too hearty.

If melon were local and in season (July-September), prosciutto and melon.

But panzanella with spring vegetables (so no tomatoes, right?) sounds, great, too.

Panzanella 100%!! I read your first line and thought you needed some bread and fresh vegetables. Panzanella = perfect fit.

My 2nd choice would be a side of grilled vegetables, plus a big bread basket. But panzanella achieves the same with more simplicity .
