Suggestions for dinner party

We are having 3 couples over for dinner tomorrow. Our plan was to grill chicken and I have a great recipe for a Mediterranean couscous salad with roasted tomatoes. Also serving a big green salad. Given the weather I don’t think we can count on grilling and I don’t think this chicken would work in the oven. Any suggestions for a main dish to serve with what else I have planned? Trying to stay away from red meat. Thanks.

My DH grills (gas grill) in he rain. Use an umbrella and close the lid on the grill.

Why would the chicken not work in the oven? Were you planning on using charcoal to give it a smoky taste? Because if you were going to use a gas grill, that is basically an outdoor oven.

We have a charcoal grill, my DH will grill if it’s lightly raining, but it’s hard to keep the charcoal going if it’s pouring

I can think of a few things that would go nicely.

First, (if everyone will eat pork) this Apricot Glazed Bacon Wrapped Cajun Pork Tenderloin - it's really nice and southerners love their tomatoes so your couscous salad will pair nicely. https://www.closetcooking.com/apricot-glazed-bacon-wrapped-cajun-pork/

If pork isn't an option, the NYT Vinegar chicken with olive dressing will work too - it's largely hands-off (sheet pan!) but appears quite fancy and results in the most perfectly cooked chicken I've ever had. I'm the poster who suggested the NYT Vinegar chicken, and I agree, that would have been my third suggestion.

Salmon would be great with your menu. So would roast chicken. You could do 2 chickens while, or the pieces cut up on sheets pans, with some extra thighs or legs as needed. I always use a Barefoot Contessa recipe for roast chicken.
