Get me through my kitchen reno

We are almost three weeks in, and I am out of ideas for easy, instant dinners. We’ve had a lot of frozen food, a lot of instant noodles, and some takeout. What else should we try? We are vegetarian and typically all homecooking, healthy eaters, but welcome any suggestions!!

Use your grill! Mushroom burgers. Veggie fajitas.

And your crock pot -- mushrooms, lentils. Get a liner for easier cleanup.

Where is your frozen food coming from? Head to Trader Joe's if you haven't already.

We did our kitchen from April - Aug a few years ago. The weather is getting nicer, so be sure to eat outside. If you have a table in the back, great. But one night my kids decided they wanted to set up in the driveway! Neighbors joined us and it was a ton of fun. Eat at the pool in a few weeks....

You will LOVE the new kitchen.

PP here. Do you have a toaster oven? That was good for bagel pizzas and the like.

Thank you! Great ideas! The most surprising challenge so far has been the lack of prep space. Combined with the challenge of washing dishes, I’m not inclined to prep anything (like veggies for the grill). But veggie burgers would be great! and I love the idea of pizza bagels (and we have even been known to be so low brow as to eat pizza toast in the past). Keep the good ideas coming!

OP, we’re in week 4 and may be delayed 6 more weeks. What do you have for resources?

Can't you grill outside? Or at least get a mini George foreman grill? That will open up a ton of options.

Costco has a ton of meat kits in their refrig section that you can microwave. We had the pulled pork the other other day during a ctaz6 sports night. So good.

During our reno, I compensated for the lack of prep space (and difficulty of clean up) by purchasing the chopped veggies at the store. And when I did decide to chop an onion or a watermelon, for example, I would just do the entire thing and toss it into the fridge in a tupperware. I had two waterproof tablecloths that I kept on our dining room table. That was pretty much our prep space and eating space. Washed those tablecloths a lot and pitched them at the end of the reno because they were trashed!

Get an Instant Pot (or 2). They were a life saver when we did our kitchen reno.

we are just wrapping up our remodel. 12 weeks without a kitche. We had the ninja air fryer/toaster oven and had lots of quesadillas and flatbread pizza and other "prepped food" from whole foods. but we also ended up eating out a lot / getting takeout. And gaining 10 lbs Actually, that was just me, the rest of my family managed to avoid the "kitchen remodel 10". 🙄
