| I bought a huge bunch at the farmer's market, because my grandmother used to cook with it: one was a soup with meatballs - but we are vegetarians; another way was sautéed with raisins and pine nuts - but DD hates raisins. I was thinking to make soup with white beans and escarole - but am interested in other tried and true escarole recipes. TIA. |

| Salad. THe French eat it with a dijon vinaigrette. My favorite is a Lyonnaise salad. You can leave out the lardons. |
