Anyone care to share their menu plan for this week?
I'm in a rut with cooking and nothing sounds appealing right now (tired of wintry produce by this time of year). I also just had dental surgery, so have to stick to relatively soft foods for myself, but still need to feed the family. Hoping that seeing other people's menu plans will give me some inspiration! |
| My plan is to look up at 5:30 everyday and be shocked to learn I have to pull together dinner. |

Sunday - kale salad with sweet potatoes, feta and avocado dressing
Mon - pork chops, fried okra and mashed potatoes Ties - ritz cracker baked cod, rice and green beans Wed - leftover rice and Indian bean dish Thurs - Salisbury steak recipe, egg noodles and leftover green beans Fri - take out |

Sunday — grilled salmon, buttered orzo with peas
Monday — smashed black bean and cheddar quesadillas, pan fried in olive oil served with mashed avocado and chopped grape tomatos Tuesday — take out Wednesday - smitten kitchen butternut squash pancakes with crispy sage Thursday —- hmmmmm. Maybe pasta with Italian sausage and tomatos? Or maybe chili dogs since I found some random frozen chili in the back of the freezer.. Friday — maybe quick cheddar soufflé with salad and green smoothies |
This is me. I ended up subscribing to hello fresh. Now I pull out a hello fresh bag at 5:30 and see what I’m cooking. It’s not cheap but saves me a little bit of sanity. |

Sunday- zucchini mushroom fritters, sausage and miso soy green beans
Monday- rice and beans with ground beef and pic de gallo Tuesday- tacos with shredded chicken, leftover ground beef and toppings Wednesday- salad and homemade burgers Thursday- Dutch oven pork roast and roasted Brussels and sweet potatoes Friday- smoked branzino and pesto pasta Saturday- homemade pizza |

We have an activity of some sort from 6:30 or 7 until 8:30 or 9 every.single.night this week. DH and I both get home from work at 6, younger kid goes to bed at 9:30. Dinners will all be of the '15 minutes or less' or the 'heat in a crockpot for 3 hours' variety.
Monday - salad, crockpot chili Tuesday - bagged salad, meatball subs Wednesday - roast chicken & baked potatoes (teen can pop it all in the oven while I'm at an activity with younger DC and DH is at a volunteer meeting), steam some broccoli when we get home Thursday - tomato soup, sheet pan chicken quesadillas (with leftover roast chicken), sliced veggies Friday - I give up, hot dogs from the concession stand at teen's game |

I am horrendous at meal planning but am feeling motivated to reduce our food costs ($$$).! I’ll use what’s in the fridge and don’t have to go back to the store to make this work, which is a win. my kids (3 and 6) will get each of the ingredients served on their plates but they may or may not eat it.
Monday - lettuce wrap hatch chile sliders (minus hatch for kids), sautéed mushrooms, rice Tuesday - Greek chicken soup, greens for adults/carrots for kids, frozen falafel or bread on side Wednesday- Pasta carbonara; tbd vegetable Thursday - Shepherd’s pie with sweet potatoes instead of regular. If I had phyllo dough in the freezer I’d do chicken pot pie instead. Friday - boxed mac and cheese and frozen peas. Like a PP said… I give up |

Lentil soup-already cooked and ready to heat back up Black bean crunchy tacos Peanut sauce noodles with tofu and broccoli Maybe Swedish meatballs and random veggies Fish tacos |
