Please help- simplest recipes for injured person

I have a foot injury and my spouse is away. I am going to order groceries and trying to think of simple things to eat that are still healthy but won’t entail me standing up for long to prep. I have no dietary restrictions but try to eat a lot of meat and veggies because that’s when I feel best.

I guess simple crockpot or one pot meals… I will get some Greek yogurt as a simple thing but I want to eat some veggies, and hot foods too….

Does anyone have ideas. Thanks. It has been a hard day

Haha sorry. Just order takeout and have sandwhiches. Don’t overthink this.

Bring a chair over to the counter and rest the knee if your injured foot on the seat so you don’t have to stand on the injured foot. I spent 3 months limited to no weight bearing after a broken foot and managed to cook nearly every day.

Lamb chops. Take less than 5 minutes in a pan little olive oil. Just to brown it. Then toss in crock pot on low 3-4 hours. I sprinkle fresh olive oil and worchestershire in there. Can add little salt or McCormicks Lemon Pepper Seasoning Salt.

Shake n bake. Dip chicken tenderloin in egg, then pork version of shake n bake, then bake it.

Fish is easy - just pop in oven half an hour - if you can find good fish.

Pan Sautee chicken tenderloins in lemon pepper or adobo

I’m sorry you have had a hard day.

Can you just buy prepared foods at the grocery store? That is what I would do in your current situation.

Or buy already cut up veggies like butternut squash and just roast on a sheet pan.

Precut veggies and boneless chicken breast (cut into chunks). Keep the spices/marinade simple and made various sheet pan meals. You can eat the same thing with pasta, greens, pita bread, whatever.

Some markets will sell premade kabobs. Even easier.

Hardboiled eggs for egg salad or just plain (or deviled) for a snack.

Salmon and broccoli cooked in the oven.

Snacky foods. Nice bread and good cheese. Mixed nuts. Dried fruit. Fresh fruit. Hummus. Pita.

Your favorite wine (assuming you aren't on too many pain killers).

I'm sorry, OP. That sounds really painful.

When I had a broken ankle, we had a lot of Stouffer's frozen lasagna. Don't be afraid of adding convenience foods to your rotation for a while.

Also sheet pan meals. My favorite was chicken thighs on a sheet pan. Toss a bag of new potatoes with olive oil & salt, scatter them around the chicken thighs. Sprinkle dried thyme and more salt over everything. Put in the oven at 375. 30 minutes later, add veggie of your choice to the pan (broccoli, baby carrots, brussel sprouts). Keep cooking until the chicken is done, usually around 20 minutes depending on the size of the thighs.

Sheet pan salmon & asparagus is also good. Drizzle olive oil over everything and add garlic salt. Roast at 425 until the salmon is cooked through. If the asparagus stalks are really skinny, you might want to add them after 10 minutes.

If you have an air fryer / countertop convection oven, sheet pan dinners are even faster & easier.

That's fine if you want to do that and maybe have others you're caring for, not necessary for a single person. It's almost martyrlike. OP, just get precut veggies, grape tomatoes, bananas and simple sandwich supplies. Tuna salad on spinach, scrambled eggs, quick things. When I'm home alone I snack on fruits, veggies, cheese, almonds.

If OP has a significant injury and it’s going to be a while before she’s recovered, what you suggested will get old very fast. But if it’s a minor injury and she’ll be back to normal in a day or two, your suggestion is fine. I assumed that since OP took the time to post here, we’re not talking about something minor/easy, otherwise the answer is obvious.

Thanks everyone. I’m not sure what it is, going to try to get into my/ a podiatrist today. Feel like the options are bursitis, tendinitis or a stress fracture. I was just standing around and out of nowhere it started killing me.

Appreciate the ideas. I can’t go to a grocery right now so will probably do Amazon fresh

Bell and Evans chicken nuggets are actually pretty yummy! Just pop in oven.

I'd probably set up a work station where I could sit and prepare veggies, maybe on a high stool.

Do you have friends in the area to tell about the injury? If so, they will likely offer to bring you food. Hope you are feeling better soon!

My easy meals are
-egg on toast
-cereal
-cottage cheese with crackers and raw veggies
-bread and cheese
-prepared/frozen food

I hope you feel better soon. If I were you, I was only cooking for myself I would get frozen meals and cereal for a couple of days. I also had an injury in my foot throbbed. Standing with too painful.

Salads and stir fry - I would splurge for some precut vegetable and pre-washed lettuce.
