Favorite Chicken Rub or Marinade, help!

My family is sick of my chicken dishes. I need some help. I’m happy to preprep or marinade. Can you share some ideas?

My favorite grilled chicken marinade is Greek.

Olive oil
Lemon juice
Oregano
Garlic, freshly minced
Salt and pepper

I just put it in a gallon size bag, along with a whole chicken cut up. Marinate at least 4 hours, then grill or bake.

Marinate the chicken using the following mixture:

6 cloves garlic, peeled
1/2 yellow onion, roughly chopped
1/2 cup loosely packed cilantro
1-2 jalapenos, deveined and seeded
2 tablespoons fresh oregano or 2 teaspoons dried oregano
2 teaspoons ground cumin
1 1/4 teaspoon salt
1 teaspoon pepper
1/2 cup fresh orange juice
1 tablespoon orange zest
1/4 cup lemon juice
1/4 cup lime juice
1/3 cup extra virgin olive oil

Process garlic, onion, cilantro, jalapenos, and fresh oregano in food processor. Pour into a bowl and add all remaining ingredients. Use to marinate your favorite protein, then grill, broil, or saute.

My recent obsession is Bachan’s Japanese BBQ sauce. I get it at Costco and it’s comparable to a teriyaki sauce, but better. I marinate chicken thighs and broil or grill them. Serve with white rice, green veg, and more sauce on top…

Chicken Kebabs-

Marinate 1-2 lbs of cut chicken in:
1 cup plain whole milk Greek yogurt
2 tablespoons extra-virgin olive oil
2 teaspoons paprika
½ teaspoon cumin
⅛ teaspoon cinnamon
1 teaspoon crushed red pepper flakes (reduce to ½ teaspoon for less heat)
Zest from one lemon
2 tablespoons freshly squeezed lemon juice, from one lemon
1¾ teaspoons salt
½ teaspoon freshly ground black pepper
5 garlic cloves, minced

Grill or cook on the skillet.

Serve with rice, bread, hummus, tzatzki, cukes, tomatoes. Then eat over a salad next night.

Soy vey sauce or Trader Joe’s teriyaki sauce, plus some coconut aminos.

Any tandoori masala from India or Pakistan, whisked in plain full fat plain, yogurt, ginger garlic paste, and lemon juice. Cover the meat after making deep cuts in it, completely with the mixture. For best results - marinate in fridge for 4 hours or overnight.

Old Bay. I’m a purist.

Although I actually do sometimes change things up, marinating the chicken in buttermilk or yogurt will make a huge difference, no matter how you season it.
