| The raw, prepared wings at Costco are excellent. They are garlicky and not too spicy. You just pop them in a hot hot oven and come out great! |
+1 The key is the post-par-steaming ~1 hr "rest" in the fridge to really dry out the skin. We like a 1:1 ratio of Crystal's Hot Sauce and Frank's (along with the melted butter and fresh garlic). Yes whatever recipe you use, you want them very dry before you bake them so they crisp up. Then you add sauce at the end. |

Definitely dry out overnight in the fridge.
Also you can dust with baking soda. |

Use a mix of baking soda, salt and pepper, and any other seasoning you like (about 2 tsp baking powder for 3 pounds of wings). Mix wings with the baking powder/salt/pepper mix. Put on a wire rack on a baking sheet. Bake at 450 for 20 minutes. Turn, bake 15 minutes. Turn, bake 15 more minutes.
Ypu can put foil on the baking sheet to make clean up easier. |
