No kneading.
Minimal mess.
Makes three loaves, so you can freeze the other two and have fresh bread with almost zero prep two more times.

Buy a bread maker, and buy high end bread flour

French sandwich bread - 1.5 lb loaf

Add ingredients in this order. Use French bread setting.

After baking I let it set for 24 hours on counter on top of few spoons so bottom doesn't get wet, and it's easier to slice

1 cup water
1.5 tablespoon olive or avocado oil
3 cups bread flour
3/4 tablespoon sugar
1 1/8 teaspoon salt
1.5 teaspoon instant yeast - make 2 shallow well, then pour in.

The NYTimes No Knead bread. Easy, but takes a long time. So damn worth it.

Find a recipe for beer bread. Flour, sugar, one 12 oz beer. The more flavorful the beer, the better.

Omg. This is what I need.

I love making bread but the super long rises and multiple rises and an extended time preheating the oven just are not possible on most days.

3 c mixed flours, 1 1/4cwarm liquids (milk or water), 2 tbs fat, 1 tsp salt, 1 tbs sugar, half a packet yeast. This will give a slow rise, which develops better flavor. Sugar is technically optional.
Knead 5-7 minutes, rest until doubled. Shape. Rise again. Bake until 190 degrees on the inside.
