Why oil free OP? |
I think there are tremendous benefits to using good quality healthy fats, OP. Avocado oil or olive oil in moderation should be part of your diet, but...

Tahini and lemon A spoonful of hummus (homemade with just tahini or some brands use only tahini and not oil) Crumbled goat cheese or feta with a squeeze of citrus or vinegar of your choice Not sure why you're avoiding oil, but fats are good for you to absorb the nutrients in a salad, so my above recommendations are ways to have some fat without oil, per se. |
You need the oil to absorb the vitamins and minerals from the vegetables. This is not a place to skip. Skip the cheese instead and use a heathy oil in your dressing like avocado or high quality olive oil |

OP here. For some reason, oil now gives me great stomach discomfort so I am avoiding it. I do eat foods with fat, e.g., avocado and hard cheeses. |
My fave, and I eat it all the time, is full fat plain Greek yogurt plus lemon juice plus a ton of herbs (basil, parley, etc) plus a clove of garlic plus one jalapeƱo, blended with salt and pepper. Also makes a great dip, but I usually eat it tossed with a bunch of chopped veggies. |
