Would appreciate dinner suggestions that meet these criteria:
- quick/easy - need to be able to freeze leftovers (we are headed to visit family for christmas the next day) - uses mostly pantry ingredients, if possible (for the above reason of not wanting to store leftovers of fresh ingredients) No picky eaters here, all ideas welcome - Thanks! |

One of our regular go to meals is Mac & Beef.
1 lb gr beef 1 lb box of favorite macaroni (we usually use medium shells) 1 28 oz can of diced or petite diced tomatoes 1 28 oz can of tomato sauce 1 6 oz can of tomato paste minced garlic (you can buy in a jar already minced) minced onion spices (I usually use basil, oregano, salt and pepper) olive oil Shredded parmesan or romano cheese (optional) Cook pasta al dente or a little more, do not go past the halfway point of the box instructions Heat oil, saute onions until translucent. Add garlic for 30-60 seconds. Add ground beef. Brown. Make a well in the middle, add tomato paste and caramelize (1-2 min) Add diced tomatoes and spices. Cook for about 5 minutes to cook the tomatoes. Add tomato sauce. Cook for about 5-10 min. Add cheese. It freezes well, but when you freeze it, the pasta will absorb a lot of the sauce. When you thaw, and reheat, add a 6-14.5 oz of tomato sauce (either one small can or one medium can) to the meal and then reheat either on the stove or in the microwave. |

Chicken pot pie. Chicken breasts in the crock pot, shred when finished. Throw shredded chicken, canned potatoes, corn, green beans, carrots and cream of chicken soup in big casserole dish. Mix Bisquik, milk and eggs, pour batter over everything and bake. Can’t remember the exact measurements but you can google Bisquik impossible cheeseburger pie and use those.
Or just make the cheeseburger pie.😁 |

Vegetarian chili or some sort of bean soup. If you have meat around - add that to the chili.
Depending on the state of your fridge, just make something that will get fully eaten, and have a smorgasbord of what is still in your fridge (I am assuming this is immediate family, not guests) |
| I'd make beef stew using Mccormick packet. Follow packet directions. You will need flour, 1 or 2 lbs stew meat, potatoes, carrots. I love onions, but I think it messes up the stew flavor, too overpowering. This freezes and reheats so well. |
| In situations like this, I typically make a pantry pasta with whatever deli meats I have on hand, typically sliced soppressata, ham or pepperoni, or canned chickpeas, drained, plus a can of diced tomatoes, a few pepperoncini, a couple handfuls of spinach if I have it, and some chopped garlic. I add grated Parmesan to the sauce at the end plus a tablespoon of butter. There are almost never leftovers (the boys/men in my family find anything served in a bowl irresistible) but it freezes just fine too. |

My favorite fast meal with mostly pantry ingredients is egg roll in a bowl. Add rice, potstickers, additional vegetables if you want.
