What are you baking? And are you doing any make ahead and freeze? If so, please explain.

I prep the dough and freeze a couple of weekends out, but cookies are freshly baked.
So some cookies are slice and bake - for those I freeze the dough logs. Some are scoop and bake - I scoop, freeze the dough balls.
Usually, the last ones I make are the rolled cutout cookies. I haven't tried freezing those.

Sugar spiced pecans
Spritz cookies
Decorated sugar cookies
Christmas Crack (not a cookie per se but goes on the platter)
Pizelles
Ton of Choc Chip cookies (with different mix ins) make and freeze ahead, much easier.

DH wants to make spritz cookies; I find them to be more trouble than they're worth. I saw a recipe for chewy snickerdoodle-type cookies with cream cheese frosting that looked intriguing...
