| Why are the tails kept on in so many recipes? Unless you are dipping them into cocktail sauce, isn’t it a pain to work around that residual shell (like in shrimp scampi)? |

I looked it up. Short answer — everyone has their own opinion, so just cook it however you want.

Super tasty bugs of the sea. I pull the tails off them for any dish that doesn't involve picking them up and dipping them. Just buy bigger bugs. |
