Why are the tails kept on in so many recipes? Unless you are dipping them into cocktail sauce, isn’t it a pain to work around that residual shell (like in shrimp scampi)?

I looked it up. Short answer — everyone has their own opinion, so just cook it however you want.

This article lists people’s reasons: it makes it easier to pick up for dipping, makes the food more attractive, adds flavor, makes the shrimp look larger, or easier for the restaurant/home cook.

Super tasty bugs of the sea.

I pull the tails off them for any dish that doesn't involve picking them up and dipping them. Just buy bigger bugs.
