do some sort of stuffed chicken- e.g. chicken stuffed with ham and cheese (chicken cordon blue) chicken stuffed with spinach and feta, best with bacon wrapped around but if you are avoiding pork you don't have to do the bacon. You can prepare the chicken rolls in advance, then put them in the oven an hour before your dinner time.
With sides- do you want all the sides to be fully done in advance? I would do some sort of roasted vegetable,e.g. asparagus, brussel sprouts, etc, then mashed potatoes (you can prepare these in advance and reheat in oven if you want), and a salad. You could also do chicken divan. Eating well has a nice recipe for chicken divan. I like it better over mashed potatoes, but rice can be a little easier. |
| Beef bourguignon. Tastes better the next day. Super easy to make ahead. Serve with good bread, some Al dents green beans. Done. |

Brisket
Recipe: It's written in "parts". I substitute a tablespoon for a part. That amount was enough for the six pound brisket I cooked. I trim most of the fat off of the brisket. I rub both sides of the meat thickly and let it sit overnight but I'm not sure that matters. >> Dry Rub >> 2 parts salt >> 2 parts sugar >> 2 parts cumin >> 2 parts ground pepper >> 2 parts chili powder >> 4 parts paprika >> >> Slice onion into rings to cover the bottom of your baking dish. Place prepared meat on onions. Slice another onion to cover the top of the brisket. Cover the dish and bake at 325 degrees 3 to 4 hours, depending on the size of your brisket. Serve with green beans or roasted asparagus and mashed potatoes, corn pudding, or popovers. |
