The store didn’t have butterscotch chips, but they did have heath bar toffee bits, which ended up being amazing. I didn’t know whether to use sweetened or unsweetened coconut. I don’t know that it mattered. I liked the more light feel of the unsweetened, though, so I’ll use that going forward. It was still sweet. The sea salt flakes definitely elevated it, I wouldn’t consider them optional. I also made a gluten free version using Schar shortbread cookies instead of graham crackers (haven’t found a gf graham cracker that is tasty.) I read some had issues with the bars crumbling. I pressed everything down well and let the bars cool to room temp. I then put them in the fridge for an hour. No issues with the regular one. I had some issues with part of the with the gf base, but I think I didn’t use enough butter. I was halving the recipe and, well fractions, math, and gooey hands… I should have added more. |
| Thanks for the heath tip! I loved magic cookie bars as a kid, but as an adult I hate butterscotch chips. They taste like plastic. I’ll sub in the heath instead. |
