pizza for adults

We're doing a family homemade pizza night, but the kids always want plain cheese pizza. Please help me with some ideas for DH's and I's pizza, so this night is less boring for us! Bonus for alcohol pairings. I've googled it but I thought this group would have good ideas for fun toppings combos. TIA!

Some of our favorites, often borrowed from our favorite restaurants:

Classic: pepperoni and banana peppers
Salad pizza: arugula, pine nuts, red onion (we like to add the arugula after this pizza had cooked so it just wilts but isn't cooked, and then drizzle with a tiny bit of lemon vinaigrette
Greek: Feta and olive, can add sausage if you need meat

Also, we like to whisk up some hot honey (just hot sauce and honey) and drizzle on almost anything or use as a dip for the crust).

Our kid will only eat cheese pizza and even then will remove the cheese and just eat crust and sauce. She's missing out!

My spouse and I like a classic Margherita pizza: just a good crust with sauce, chunks of mozzarella and ricotta, fresh tomato slices, and fresh basil leaves added after it comes out of the oven or grill.

Would your kids like something like this, or do they only like shredded mozzarella on top?

Best unexpected pizza "topping" I've had was chicken tikka masala. Delicious!

Homemade pizza newbie here-do you buy refrigerated pizza crust or make your own? Do you use a pizza stone?

Make our own, pizza stone a must. Also use a pizza peel because otherwise it’s hard to get the pizza off the stone.

I make my own dough and I use a pizza stone.

Garlic, olive oil, very thinly sliced potatoes, cheese.
Sliced meatballs, mozzarella, ricotta, fresh oregano, red sauce.
Pesto, artichoke hearts, pickled peppers, tomato chunks, feta, mozzarella.

We make our own crust using The NY Times Roberta’s Pizza Dough recipe.

I don’t know about “adult”, but my favorite pizzas are:

ham, mushroom, and black olives

Hawaiian (probably not what you’re looking for, but the kids might like)
