Cooking or baking with buckwheat

I dislike white flour. I don’t like the taste and I know it’s not particularly healthy. I’ve tried buckwheat banana bread with 1/3 the sugar and it turned out great for me and my son (DH tried it but wouldn’t take a second slice). I think a slice is delicious griddled with good butter! Any great recipes with buckwheat that are healthy or healthyish? Muffins, pancakes, cookies, or maybe some savoury bakes?

I’m considered a buckwheat dumpling wrapper.
