Sunday Dinner: what are you making?

I love cooking on Sunday. We’ve been sick the past week and only just getting our appetites back but want something hearty and nourishing. I’m making this pasta with a spinach salad:

My kid is eating pizza because she’s going to a bday party at sky zone. We are having salmon marinated in pesto, Trader Joe’s 3 min rice, and broccolini. DD will have leftovers tomorrow with the babysitter.

Cheesy vegetable chowder, rolls, salad. I need some comfort. I’m so depressed and I’m hoping a good meal and a good night’s sleep will help me face tomorrow.

Vegetarian pot pie with a salad tonight. Plus lots of extra meal prep to get ahead on dinners this week.

We are having meatball subs. Homemade, but from my freezer stash of meatballs and sauce I made a few weeks ago. Sunday dinner has become an easy homemade kind of meal.

Oh honey. If you’ve ever had salmon at a restaurant, especially for brunch, you’ve had leftover salmon! LOL
