non-alcoholic "mixed drinks"

I know this is a thing now - I need a tutorial! What are the options for non-alcoholic drinks that mimic cocktails? And are there any that aren't sweet? When I drink mixed drinks I tend to like martinis with olives, gin and tonics, bloody marys, or bourbon on the rocks.

Grab non alcoholic strawberry daiquiri mix, ice, frozen strawberries. Replace liquor with juice or water or even non alcoholic champagne. A fancy glass with a sugar rim and an umbrella… tada… Do the same for peach or whatever flavor.

I've seen options with bitters and shrubs that can balance out the sweetness of fruit juice (or replace it). Seedlip may be an alternative to the martini.

Simple syrup, fresh lime juice, seltzer. A splash of ginger beer or other juice of your choice if you like. Or maybe a ginger simple surup. You can make it as sweet or not sweet as you like (I also don’t like sweet drinks)

I get frustrated because the food magazines all have features with cocktails, but very, very rarely include a mocktail, although millions of us don't drink.

seedlip is good if you don't like sweet- with fever tree tonic plus fake gin from Monday? Phony Negronis are also good if yo have them very very cold with ice and crushed mint. from st. agresti- sometimes they taste nyquilii/sweet but usually pretty good when chilled.

I make cold-process shrubs from a lot of different seasonal fruit. Berries, peaches, nectarines, cranberries in the Fall. They definitely need to use a bit of sugar because otherwise there's no way to draw the flavor from the fruit. However, because they are added to vinegar, the finished product isn't cloyingly sweet. A splash added to seltzer and sparkling water is a nice non-alcoholic drink. As a bonus they also make a good addition to salad dressings.

You can also use bitters in non-alcoholic drinks, like the iconic lemon-lime bitters from down under, to make them more complex.
