Going vegan - resources and ideas?

I’m heading back from a family reunion with a strong reminder of the history of heart disease in my family. My aunt said her cardiologist told her that there are two types of cardiologists: those who are vegan and those who haven’t read the research.

So, I’m going vegan except for salmon and tuna. I work and have little kids so I need to be able to prep meals fast.

Does anyone have any suggestions for meals or resources?

I would look at Pinterest for ideas? Are you making the kids go vegan too or just you? I’m not a Vegan but my daughter and I are vegetarian and eat a lot of plant based foods. The hardest part to replace is dairy/cheese. We only have non dairy milk in the house but will put cheese on a veggie burger or she’ll have a cheese stick for a snack.

I'm not a vegan but I don't eat dairy, so I just wanted to tell you that oak milk is so good - don't even bother with the other non-dairy milks. The oak milk is creamy and delicious.

I’ve been a vegetarian for ~20 years. It’s never been easier to go “plant-based.” My thoughts: Pinterest is great for ideas. Make sure to eat a lot of protein and fat. Some people flame out quickly on veganism/vegetarianism because they’re not eating enough fat and protein. It should be easier for you if you are still eating fish. Nut-based protein and fat is great, like peanut butter. Natural PB or nut butter (no sugar added, in any grocery store) on toast is a great meal. Oatmeal and oat milk is delicious.

I think you’re making a healthy choice, for yourself and for the planet.

We have been getting Purple Carrot for over a year and love it! The meals are delicious (except the pre-made ones, I don't recommend those). You get all the ingredients you need and a recipe book with the meals you ordered plus all they offered that week. So if you tried it just for a few months even, you'd have many recipes to try out. I thought this is what we'd do, but we continue to get the deliveries because it's so easy and convenient and a relief to not have to plan meals and grocery shop.

We try to eat vegetarian most of the time. I work full-time and have two kids with afternoon/evening activities. I try to meal prep on weekends and cook in larger quantities (DH and kids also help with food prep).

I am a big fan of Budget Bytes. Obviously, it's cost conscious, but it's also very practical. I find their recipes to be consistently straightforward with simple techniques and ingredients I almost always already have on hand.

Real Foodie Dietitians is a bit more aspirational for me, but everything I've made from here has been great. I actually have a meal prep sheet pan dinner in the oven now.

Eat Whole Plant Foods! Try to stay away from the vegan "junk-processed" foods. I like Pick up limes and Rainbow Plant Life.

We have been getting Purple Carrot deliveries for over two years. I love it! The recipes are satisfying and delicious. Highly recommend.

NP: I'd like to understand how pointing out that eating fish isn't part of a vegan diet makes PP an a-hole? Maybe you need to eat some animal protein, it might calm you down a bit.
