ISO allergy friendly main dish (GF, dairy-free, meat-free)

I may start with chickpea pasta and add veggies to it or noodles With veggies. Any other ideas to make it look appetizing? Open to alternative ideas as well.

Stir fry with either rice noodles or cellophane noodle — pancit, pad Thai, or jap chae.

tacos with corn tortillas--I would do refried beans, roasted veg, pico de gallo, etc.

a potato-crust quiche (many recipes online) would work well--this time of year I would use zucchini in it. Just use a non-dairy milk; unsweetened oat milk is a good thickener. Serve with a nice green salad.

A sweet potato and black bean chili would also work well. There are GF cornbread mixes.

Or maybe roasted/grilled eggplant, summer squash, onions, and the like with a chickpea and rice pilaf. Serve olives and hummus and veggie sticks on the side.

Unless there are major allergies, you could also adapt several of these by adding side items like meat, cheese, etc.

Middle eastern platter of salads (tabbouleh, baba ghanoush, fattoush -- either use GF pita or veggies as dipping vehicles) and sides (roasted eggplant, zucchini, etc, using pine nuts, harissa, herbs, for extra flavor -- and rice if you want a designated starch). Serve feta on the side if some people would like it.

Main dish is falafel (we use Mark Bittman's recipe).

You can make everything in advance and serve cold or room temperature, or everything ahead except the falafels.

We used the chicken, but obviously you'd use the tofu. Both directions are in the menu.

We also didn't use peanuts because we have that allergy in our family. I'm not clear if your list is the entire list of allergens, or if you are avoiding all major allergens. If so, this won't work since sesame is on that list.

Coconut milk-based curry with just vegetables or tofu.

But the pasta could work. Add a salad, and bread with a vegan butter or olive oil option.
