Isn't the idea to accept the manufacturer's financing and then pay it off a week later?

The dealership makes money on the financing, higher commission to sales reps if you finance. They are more likely to cut you a deal on the price if you finance. Of course, who knows if that's the case these days with cars selling over MSRP. |
