DH has been diagnosed with insulin resistance/prediabetes, and the dietary suggestion so far is to eat lower carb with a lot of vegetables.
The meals that seem to fit this and go over the best with the whole family are those where there are vegetables and meat cooked together. Some examples that are hits with my kids (who also get a carb on the side) and DH are: Beef stew made with lower carb vegetables, served over mashed cauliflower instead of mashed potatoes Vegetable heavy soup with some meat Pizzas made on portobello mushrooms with homemade italian sausage as a topping, plus a salad Egg roll bowl with ground meat topping Any suggestions for other recipes like that? |

Garlic chicken and broccoli (mix with pasta for those who want carbs)
Ground beef, broccoli, low/no sugar version of a Soyaki sauce (serve w/ rice) Meat & vegetables for stir fry, service w/ cauli rice and/or rice Tikka masala, serve w/ asparagus, cauli rice and/or rice Stuffed peppers Your mushroom pizzas sound good, can use cauliflower crusts and regular crusts if you want a more traditional pizza Steak or fish w/ your choice of salad and/or roasted vegetables, bread on the side Lemon chicken, green beans, rice or bread on the side |

PP here and I will add italian sausages and peppers, serve in rolls for those who want a sandwich version, add more veggies w/ a salad
Crustless quiche or frittata filled w/ veggies, side salad (or vegetable omelets for that matter) Bacon & eggs with mixed vegetables of your choice Spinach gratin as a meal Lots of recipes where you halve a squash, remove seeds, and fill with toppings, seasonings and/or meat - can serve w/ bread or a simple pasta w/ butter |

Egg salad, chicken salad, tuna salad in tomato cups with crunchy vegetables and greek yougurt dip (instead of a sandwich and chips) Lettuce wrapped little bacon burgers at five guys are delicious Spaghetti squash served with spaghetti sauce |

Your choice of smoked sausage with peppers and onions and cabbage. We do beef kielbasa but any smoked sausage will be great.
Slice and brown the sausage, set aside. Add a bit of olive oil to the pan Sauté 2 sliced bell peppers and one sliced onion until soft Add sausage back into pan with finely sliced or chopped cabbage, however much you want. At least a quarter of a cabbage. Season with salt, pepper, and a tablespoon of red vinegar or more to taste. Cook for 5 or so minutes until cabbage is wilted. Great by itself, over rice, or in a tortilla (could do low carb tortillas). Excellent leftovers. |

Quick "chili"
1 onion 3-4 zucchini jar of tomato sauce 1 tsp cumin garlic powder chili powder 1 lb ground beef Sautee onion and sliced zucchini until close to soft Add jar of tomato sauce and the ground beef. Stir around so beef crumbles Spice to taste |

NYT times has both a great cauliflower piccata (I serve over whole wheat couscous) and sheet pan Italian subs (served over shredded lettuce instead of in rolls).
Also going through this, OP, and all of us have lost weight and are eating better! |

Chicken apple sausage fried with cabbage, tart apples, and onions if desired
omelettes/quiches I like making a large bowl of stir-fry vegetables with a few (maybe 3 small dumplings), terriyaki sauce, and Trader Joe’s Furikake seasoning, sprinkled with sunflower seeds. The dumplings would have some carbs, but maybe it would be all right if used sparingly? Zoodles (zucchini noodles) sauteed with olive oil, salt, and garlic, topped with a vodka pasta sauce or an alfredo. The meat would be cooked separately, but even my Dad who doesn’t like zucchini liked these. Just know that they cook down a lot so you need to start with what looks like too much. |
| Spaghetti squash cut in half and roasted in oven, then fill inside with spaghetti sauce with meat or sautéed chicken tossed with pesto. Use fork to make spaghetti squash into “noodles” when eating. Kids can eat regular pasta. |

| I would just mix frozen vegetable mixes into a pan, add some meat and some flavoring, but would restrict things like rice and potatoes. That was a go to dish of mine until I got married. |

My DH eats low carb…(he eats the parts of the meal he can, and green salad is usually served on the side)
- pot roast or turkey breast (slow cooker works well), with carrots/potatoes and green veg - stir fries (various), cauliflower rice for him, regular rice for the rest of us - tacos!- he eats his on low carb tortillas or makes a taco salad - burgers or grilled chicken sandwiches- he eats his bunless with lots of toppings and a lettuce wrap - chili (lots of low carb recipes out there) - breaded chicken cutlets with sides..for the breading on his I use crushed pork rinds or wisps - pizza. I make his crustless in a small Pyrex, or on a FlatOut low carb wrap in oven - fajitas- sheet pan recipes are SUPER easy, lots of lettuce and toppings he likes on the side - chicken parm with zoodles for DH - chicken noodle soup- I add noodles for us and shredded CABBAGE for him at the end (tastes great actually) - steak salads are a big favorite. Lots of great recipes out there to make special. I serve kids other sides with. In all cases above, he knows what he can eat, and eats what he can. I serve the kids (and sometimes myself) a quick starch if needed - rice, baked potato, rolls with butter etc. If we are having something he truly cannot eat (rare) I keep Buffalo wings in the freezer. They are actually really good made in the oven. He eats with celery and dip etc and loves it. He also loves to grill and often makes the cuts of meat/fish he likes and I just handle sides. He makes enough for his own lunch leftovers etc. |

I make something like this pizza casserole with more veggies—usually red bell peppers, mushrooms and artichoke hearts, and I use 1.5 jars of pizza sauce (check labels for added sugar) and cook in a 9x13 dish. We like spicy Italian sausage—there’s a brand out of Denver that I buy in bulk at Sams. It’s a pretty forgiving recipe—I once used a giant zucchini out of my neighbors’ garden instead of the spaghetti squash.
