What to do with veggies leftover from stock?

I made a veggie stock - mushroom, onion, carrots, celery....I usually dump the veggies when it's done, but is there something else I can do with them?

I mean all the flavour's in the stock so unless you have pigs to feed, I would just toss it.

Flavor and texture will be gone by the time the stock is ready. I throw mine into a compost bin.

I compost them.

I give them to my dog. She loves cooked carrots and such

Take onions out. Purée. Put in ice cube tray for doggie ice cream. Or purée and add a couple tablespoons to dog food.

We use a good amount of salt in our stock so I always find the veggies still quite tasty. I either make into a veggie puree ... put in vitamix and add whatever else you want ... chickpeas, garlic, and lemon for a hummus like dip or sour cream for something more like a chip dip.

Rare they go to garbage unless too many pepper corns to pick out.

This actually sounds delish. Especially with the addition of chickpeas.
