For business, I'd just go by average earnings for a bachelors degree in business:

UVA
W&M
VT
GMU
JMU

Sort by state and bachelors degree.

I'm a business professor, and my perennial advice is that business can be a bad unfocused undergrad major.

I took my first accounting and finance courses in my M.B.A. program, and had no idea they were academic areas. How the hell does a freshman want to major in these fields without taking a single course? Why does this student want a "better" school? What does "better" even mean?

My charitable interpretation is that your kid made a bad decision and chose a school with poor opportunities. Now she wants to get her shit together with an employable major.

My charitable statement is You must be a stupid professor at a useless business school. So, until you did the first level Finance and Accounting courses in your MBA program (so, that was your first semester) you didn’t know they are academic areas. How the hell did you even decide to do MBA in the first place? What courses did you think would be taught in MBA program?
Signed, MBA with majors in Finance and Strategy.

UVA's undergraduate business school is strong in finance, with good job placement. It is a 2-year school, so students apply in Fall of their 2nd year at whichever university they attend. It is competitive to be admitted and there are specific minimum academic requirements, so go check out their web page and look in to that. It is not a safety school for anyone, but worthwhile to try. UVA calls their undergrad business school the "School of Commerce". So look for that instead of "business".

They’ve changed it up and now it’s over 3 years instead of the 2.

Wow, what school you teach at? This probably helps more.
