Massive struggle to lose weight

Wrong.

If you are not losing weight you are not in a calorie deficit. Period.

That is the law of thermodynamics.

That said most people who "can't" lose weight aren't really eating as few calories as they think or staying in the deficit long enough to lose weight.

This.

I swore I couldn’t lose weight and actually had to stop running/intense cardio so that I could eat less. When I do as much cardio as I was, I was always hungry but i was absolutely eating more calories tban I was burning

This!

Much easier to workout a little and focus on eating less but high nutrition than putting in workouts that increase hunger and make a sore body.

Eating the same thing every day cannot be good for your body. Nourishment requires variety. And fasting too much is going to make her binge

DP. Then use the above meal as a sample that can be tweaked for variety: salmon, kale, avocado, berries. No need to complicate.
Start with bigger servings and gradually scale down.

Is whole grain cereal with milk okay?

You're better off consuming actual whole grains like wheat berries and oatmeal.

OP, you might benefit from alternate day fasting. Eat more (at least your tdee) on eating days, and fast (or semi fast) a few days a week. I personally think eating in a shorter window is better to rein in insulin issues but also that long term caloric restriction every day is worse for your metabolism than alternating days of full eating and restriction.

You might also benefit from doing a dexa fit scan or other metabolism tester. Mine showed me burning a good 200 calories under what was expected for someone with my age and body composition.

Third, make sure you are getting lots of fiber and probiotics. The bacteria we have (or lack) in the gut regulates so much--hunger hormones and whether or not we extract a lot of calories from the foods we eat and even signalling hormones/metabolism to store or not store calories (this is where the law of thermodynamics has its limitations--yes its calories in and calories out, but how much we absorb and burn is unique and dependent on so many different variables).

You can also always try the weightloss drugs.
