Need new dinner ideas!

We're back in the world of sports practices nearly every night (and games on the weekend) so I don't have much time to cook. Looking for easy dinner ideas that are more than just grilled cheese or brinner. We don't eat red meat and DD won't eat chicken, which makes things a little harder. Any prepared or easy-to-make meals you love?

Same, here. It's all making my head spin.

Some ideas that work here to pack and bring with us:

bean burritos - everyone tells me what they want in there, and I roll it up and put it in foil and bring it to the game/eat it in the car - beans, cheese, sour cream, salsa, avocado, rice (if i have some already made), chicken if I have some

subs - i buy those hard rolls (bolillos) at our grocery, and again make subs to order, and pack them up

pbj sandwiches

and I just always pack up fruit and veggies


quick dinners:

pasta + meatballs+ veggies
breakfast tacos + veggies
tacos with frozen/premade meat filling
hearty soups

We like to make a big batch of oven roasted chicken shwarma (NYT has a great recipe using chicken thighs or breasts) and roasted carrots, broccoli or another hearty veg and have it with rice and keep it on hand to make our own sandwiches and nsalads etc during the week. You could add humuous or haloumi for your veg daughter to supplement hers.

Also a big veggie lasagna (last one included sweet potatoes and kale), or a big pan of been and cheese encholadas can be ready to eat wiith a few minutes reheating in the microwave or oven.

Pasta with Pesto is popular at our house. Green pesto and red pesto. Chicken on the side. If you want a protein added to it, try chick peas or any beans you like. Add it to the pesto and pasta. And if you want to 'hide' the beans, use hummus. They come in a variety of beans.
