I am trying to get some recipes together that area extremely easy, almost no prep for a full meal.
One I love is baked feta with cherry tomatoes, olive oil and herbs (just bake it and have with bread, pasta, chicken, whatever). Another is a crockpot meal with salsa, cream cheese and chicken where you just add it all in. Do you have any favorite no or almost no prep meals like this (no chopping, etc?) thanks! |

We love that crockpot salsa chicken thing!
Cheater baked ziti - one box pasta + one jar sauce + one jar water. Cover with foil, bake, uncover and top with cheese at the end. Serve with salad etc. honestly, if you have the hands-off time, a roast chicken is extremely fast/easy to prep esp if you use a premade spice blend or just stick with salt and pepper. I roast in a big cast iron pan with some baby potatoes or carrots or brussels sprouts on the side and everything cooks together (bonus: only one pan to clean). And for any meal i am a big fan of either bagged frozen veg or fresh veg like broccoli or green beans steamed in the microwave. We have a silicone steamer pot insert that i stick inside a big microwave safe mixing bowl… dump veg in… add water and cook for like five mins while you are doing something else. |

Rice with a fried egg on top with a teaspoon of soy sauce and seaweed sprinkles.
Pasta with fried egg and grated parm. Quesadilla with black beans, salsa, and sliced avocado. Bread, cheese, and fruit. Chicken thighs with Indian butter sauce. TJ's frozen samosas with fruit/yogurt smoothie. |
| Pinterest sheet tray meals. Typically you just throw ingredients with some seasonings onto a sheet tray and bake. |

Roast beef in crockpot with packets of ranch mix, Italian dressing mix and beef gravy mix on top.
Corned beef in crockpot, use included spice packet and cover with water. Add cabbage for last 30 minutes. |

| Tacos with corn tortillas, bagged cabbage, sour cream, cheese, hot sauce, etc. I use frozen fish filets or frozen chicken tenders in the air fryer. Huge hit. |

Throw leftover vegetables and rice or pasta along wth broth and some seasoning into the instant pot for a half hour. Make a grilled cheese).
Rub pork shoulder with salt, pepper and garlic. Put it along with a little dr. pepper in the instant pot. Cook until tender. Shred, add bbq sauce. Serve with store-bought cole slaw and potato rolls. |

I satuee cubed tofu in avacado oil and then dump about a half a bag of these veggies in the pan with some avocado oil. I usually have fresh spinach on hand and will add that. I let it cook down a bit and then I'll add whatever store bought sauce I have on hand. Sometimes it's a teriyaki sauce, sesame ginger, I've used butter sauce (Indian). Just whatever I have on hand. At the same time, I cook a batch of basmati rice and serve the veggies/tofu over the rice. Super easy and zero prep. We don't eat meat but you could easily switch out whatever you want for the tofu.
Another meal I make when I have zero time is spaghetti served with store-bought sauce. I throw a bag of frozen vegetarian meatballs in the sauce. For a vegetable I'll take a bag of frozen spinach and toss it with avacodo oil/salt/pepper and roast it in the oven (yep, through it in there frozen it comes out fine.). |
