Take to work lunch ideas

I’m sick of my usual soups and salads and need ideas. I like to make something on Sunday to get me through Wednesday so I usually make hearty salads or brothy soups. I like to keep it vegetarian but don’t need to. What are your lunch ideas?

If you shop at trader joes...Bagged Cruciferous crunch + Pre-cooked lentils + carrot ginger miso dressing makes a quick hearty salad.

Plain greek yogurt + berries + homemade granola. I use this recipe without dried fruit

On Sunday I make crustless quiche “muffins” in an oversized muffin tin.

4 eggs
About 1/2 cup egg whites
1/2 cup milk
Onion and 2 peppers stir fried
About 3oz of shredded cheese
2oz chopped ham
Seasoning—usually Italian

Put the first three items in a bowl and mix. Distribute that into muffin tins sprayed with cooking spray. Add other items. Cook for 30 min at 400.

I have one of those each day with some yogurt & fresh berries.

This is in my rotation and I love it. There is a similar one in rotation too though, so I’m done with cauliflower for a month or so.

Homemade Taboulleh with lots of fresh herbs, side of hummus with pita chips or raw veggies

On Sunday, I roast a tray of vegetables (typically, broccoli,red onion, carrots and whatever else is in my frig). Then, I cook off 1-2 cups of quinoa. For lunch, I place quinoa on the bottom of a bowl, top with veggies and add a little bit of dressing. You can add chick peas to this too.

Could you batch-cook four or five meals and freeze in portions so you can mix it up during the week? Things like burritos, veggie chili, hearty soups, indivdual quiche?

-Boring, but basically homemade lunchables: variety of crackers + cheeses + cured meat + carrot/celery sticks/snap peas/broccoli/whatever you like + side of trail mix

-Make your own instant noodles in a jar

-fried rice

-sushi rolls with just rice and vegetables

-Greek yogurt with frozen berries to keep it cold, grain free granola

Sometimes I also do pearl couscous, cherry tomatoes, diced cooked zucchini, and little mozzarella balls.

I make a big pot of sausage/lentils and eat it for lunch every day, but I don’t need variety.
