Help......simple healthy sides

I need help. Other than corn on the Cobb or string beans I don’t know how make any simple healthy sides. Any suggestions?

Choose veggie- peppers, potatoes, asparagus, Brussels, etc. Toss with olive oil, salt, pepper. Roast. So easy.

Steam [insert pretty much any vegetable] and toss with a little butter and S/P

You can do it in the microwave in less than 5 minutes.

Steamed broccoli, cauliflower, carrots, baby potatoes, cabbage

Roasted broccoli, sweet potato, asparagus, brussel sprouts, cabbage, peppers, onions

Baked: Sweet potato, spaghetti squash

Microwaved from frozen: peas, edamame

Raw vegetables, with something like a store bought hummus as a dip

Salad

Sliced tomatoes

Fresh fruit

Sauté and veggie in pan with olive oil and garlic.
Or roast with olive oil and salt.
Salad.

Sauté fresh spinach in olive oil with garlic and lemon juice. Sprinkle with lemon zest.

Sauté, steam, or bake/roast any vegetable. Or make a simple side salad—literally just lettuce, tomatoes, cucumbers.

Pretty much the only thing is to steam frozen veggies that will inevitably be sort of blah unless doused with something tasty and no a little sprinkle of salt or olive oil doesn’t cut it

I have given up and our side is just green salads. It took kids about a month of constant grumbling to accept.

Almost any vegetable can be stir fried or roasted with olive oil and seasonings. I think the only trick is figuring out what seasonings you like. I use garlic, ginger and sesame oil a lot; a shake of adobo or Old Bay; or caramelized onions— if you have the patience to make them. I grew up on Southern cooking, so greens, cabbage, corn, black eye peas get cooked with sautéed onions and smoked turkey (either as seasoning or to make a complete meal). Fried apples or homemade apple sauce or peach compote make nice sides. And a dollop of Raos sauce and a sprinkle of cheese is great with veggies, especially zucchini, yellow, or spaghetti squash.

It would be easier to make more tailored suggestions if you could provide a bit more information. Do you stick with corn on the cob and string beans because that’s all you like? Are there other sides that you would enjoy — if you felt comfortable making them?

For speed, you can’t beat the pre-cut sweet potatoes or butternut squash. Roast on a pan.

Steamed broccoli is yummy.

They also have a lot of seasoned vegetable blends in the freezer.

I roast trays of vegetables with an assortment of spice blends. It’s super easy and cooks while I’m getting the rest of dinner together.

Honestly I wouldn't even know how to cook String Beans.
