Healthy, easy, crockpot recipes

I go back to work full time after subbing for a few years and possibly won’t be home from my new school in time to make dinner. We own a crockpot and I’d like to use it frequently. Unfortunately, a lot of crockpot recipes I have seen are for things like lasagna or other things that sound like way too much work.

Does anyone have a recipe they like that is healthy, easy, and crockpot-friendly?

So far, I’m planning:
Chicken curry
Chili
Coq au vin
Lentil soup
Clam chowder

Most soups and stews are good in the crock pot. A favorite of ours is chicken pot pie soup.

We do bbq chicken or Buffalo chicken (breasts) in the crockpot then shred it for sandwiches or do chicken with green salsa and make tacos.

Chicken fajita soup is great, as it’s customizable by the person with the additions of cheese, sour cream, tortilla chips, etc.

Italian beef sandwiches
Get a large chuck roast. People will debate this, but i tend to out it in the crockpot still frozen (just thawed enough to get the pkg off lol)
Add one jar of pickled sliced banana peppers incl juice. Just dump it over the beef.
Cook on low for the whole day.
Shred and pile on buns. Add provolone cheese.
My entire family goes bonkers for this, it’s stupid easy and makes a ton so leftovers can be quesadillas, etc for future lunches.

Pork BBQ is a fav in my house. Put a pork shoulder roast( Boston Butt) in the pot with some onions and spices all day. Before dinner shred the meat, drain some of the fat, and add some bbq sauce as desired.

NYT’s Slow cooker salsa verde chicken. It couldn’t be easier and is really good, esp on rice with tortilla chips

On a weekly basis in the winter I make a chicken soup from scratch in the crock pot. I use 3-4 bone in chicken thighs or the whole leg, lots of veggies which are delicious to eat with the soup (4-5 carrots, 1 parsnip, 1 onion, 1 sweet potato- keep the peel on, 1/2 celery root but you can mix it up)- I keep the veggies in relatively big pieces so there is not a lot of chopping, lots of spices ( salt, pepper, onion powder, garlic powder, dried dill and paprika- for color). Fill the rest of the crock pot with water (I think mine is a 6 quart) and let it go on low for the whole day. Serve with your favorite noodle, rice or matzo ball. Sorry I don't have exact measurements for the spices- I just add by feel.

Sounds good! Do you use the coconut milk, or the heavy cream?

Pot roast! You just need some beef broth and a packet of onion soup mix. You can even cook the carrots and potatoes in the same pot.

Carnitas/ pulled pork

Bolognese sauce

Lamb shanks

Chicken cacciatore. Add chicken breasts, can of diced tomato, can of crushed tomato, Italian seasoning, dash of dry white wine, onions, garlic, mushrooms, and peppers. Cool all day on low. Serve over pasta of your choice.

This is the best! It's one of the only dishes that doesn't taste like crock pot mush. And leftovers are a bonus.

Coconut milk, because I tend to have it in the house (never have heavy cream)
