What’s for dinner this week?

I’m thinking:

Salmon marinated in Asian-influenced sauce, rice, green beans for tonight.
Cauliflower gnocchi, salad for tomorrow
Vegetable soup, mini hot ham and cheese sliders for Tuesday

I need more ideas. I’m in a slump!

We like salmon in pesto, served with rice and veggies. Tomorrow I’m making tacos with beef less beef crumbles from Trader Joe’s. Tuesday I’m making baked ziti with the other half of the beefless beef crumbles. Wednesday rotisserie chicken with veggies, Thursday ramen soup with the leftover chicken and I add carrots/celery……….. that’s as far as i got.

Monday: Glass noodle stir fry with beef
Tuesday: Salmon with veggies
Wednesday: Rotisserie chicken
Thursday: Pasta with turkey bolognese
Friday: Takeout night

Tonight : penne vodka (recipe from Carbone in NYC) and roasted garlic green beans

Monday: turmeric chicken in red curry with ramen noodles

Tuesday: broccoli and butternut squash soup with cheese turnovers

Wednesday: ground chicken kofta kebabs with vermicelli rice and a salad

Thursday: take out

I should be planning that now:

Eggs (we do one night of breakfast for dinner each week - alternative between eggs & turkey bacon one week and pancakes the next week)
Beef stew
Pizza
I think I might do chicken chili in the crockpot or a taco casserole - I'll ask my husband which he would rather
Probably a Mezeh family pack for the one night a week we take out...

That's all I got for now.

Not incentive but i have a 5 and a 2 year old. So quick and filling is the plan.

Not the OP, but these sound good. Do you have a recipe for the nut loaf?

In no particular order…

Chili with guac and chips on the side

Lasagna and salad

Asian rice bowls with tofu and gochujang brussels sprouts

Vegan meatballs, sour cream mashed potatoes, some leftover sauerkraut, cucumber salad, probably beets

Homemade pizza and big salad

Butternut squash coconut curry soup (lunch probably)

Tonight likely to be tuna melts with tomato soup and use up some veggies and dips from the weekend

Thursday-Sunday: Leftovers. On paper plates. On the couch.

I will say I just tried the Trader Joe's chicken Shawarma thighs and they're my new favorite shortcut.

Why would you be judged for NYT chicken shawarma? I like the stuffed peppers idea.
